Avo and mussel salad



 
 

Ingredients

 
  • 1
    can
    smoked mussels in vegetable oil
  • 2
    ripe avos cut in 3cm cubes
  • 200
    ml
    mayonnaise
  • 1
    tsp
    sugar
  • 1
    pinch
    salt
  • 1
    pinch
    freshly ground black pepper
  • 1
    tsp
    white vinegar
  • 4
    small spring onions - finely sliced rings
Servings: Change Serving
 
 

Method

 
- Drain Mussels from oil. Keep the oil - Add mussel meat and cubed avo to serving bowl - Mix mayo, sugar, vinegar, salt and pepper together - Add mixture to bowl and stir lightly. Try to keep the avo in pieces - Dress with sliced spring-onions - Refrigerate till cold - Best served as a starter with coarse/toast bread, or as a salad with pork chops.
