"There was a time when you knew what you were eating. Ingredients weren’t listed as codes, you knew the people you were buying from: the Butcher, the Baker, the Cheese Maker. There was a time before artificial preservatives, long-life anything, and additives to keep your 'bread' fresh for two weeks." After working in hotels, restaurants, on private yachts and in luxury safari camps, chefs and owners Zana and Nick Scheltema decided to open a little deli with a lot of heart. Providing quality meals using fresh ingredients – from known and reliable sources – the pair are intent on meeting high standards, where quality matters and food is made the way it should be, bringing back the basics from a time gone by.
