Sorbetiere in Woodstock specialises in sorbet, which is basically the best local fruit possible + water + sugar.
The key is getting very ripe, healthy fruit and finding the right balance to express intense flavour and a creamy texture by churning the mix.
Their sorbets change every few months with the seasons, although right now they are changing every day with culinary experiments, but you will see them come and go; you will not find Sorbetiere making strawberry sorbet in July!
They constantly work on cream-based experiments, just for the fun of it, like the lemon frozen farm yoghurt with caramel pieces or our ice cream crunch inspired by a traditional French frozen dessert called Vacherin. This is a layered ensemble of sorbet or ice-cream with bits of meringue, portioned individually for immediate pleasure.Twitter
