Not everyone cares where their coffee beans come from. Even fewer people care about the name of the actual seed their coffee is brewed from. But one thing that almost everyone does care about is good value for money.
So here is a little bit of value-laden information: You can tell a lot about a coffee you’re about to spend money on just by asking what varietal (or combination of varietals) the coffee is made up of. If you see the names “Gesha”, “Bourbon” or “Typica” you are far more likely to be drinking a high-quality cup of coffee. But Gesha, Bourbon, Typica are not alone.
There is another such varietal that Rosetta Roastery finds particularly exciting; the hybrid bean, Pacamara. Bred out of a combination of the Typica, Pacas, and Maragogipe varietals, the end result is a giant bean with a delicate floral sweetness and a bright, refined acidity.
The El Zapote from El Salvador is one such delightful pacamaras lot that has brought joy to the world. Or at least to the roastery in Woodstock, Cape Town. But not to worry – they're happy to share.
