He has 20 years collective experience in the aesthetics of Japanese cuisine and zushi creation and an in-depth knowledge and understanding of Japanese culture and history.
Funiki in the Japanese language holds within it the concept of kotodama, which refers to the mystic sound, power and soul of the language that can affect or influence the environment, body, mind, and soul.
