Camphors at Vergelegen, signature restaurant, which overlooks expansive lawns and gardens, takes its name from the magnificent camphor trees – at least 300 years old – in front of the historic homestead.
The Vergelegen culinary team, which includes renowned chef, mentor and food judge Garth Stroebel as a consultant, has brought acclaimed chef Peter John ‘PJ’ Vadas on board for this next chapter of Vergelegen’s hospitality rejuvenation.
The resultant menu is described as cuisine that shows simple restraint with complex precision and which supports local producers. Vergelegen produces classical wine varietals and the menu reflects a modern take on local and international classic food.
