PRESS RELEASE - Celeb chef Reuben Riffel has stepped things up at his premier address One&Only Cape Town eatery – ahead of the Summer season.
Regulars can expect the eatery’s signature focus on fresh, local ingredients and plenty of clean flavours but the menu will be taking on a new direction too. “Where the menu was quite big before, I’ve reduced it and really pushed our focus on amazing seasonal ingredients. We’ve refined things a lot and there’s more seafood too – don’t worry though, the signatures like chilli squid and slow roasted pork belly will remain”, he laughs.
Diners can expect mouth-watering new signatures on the ‘less is more’ menu – look out for stars such as roasted kingklip with prawns and fennel cream, slow cooked cured salmon with star anise, orange and vanilla as well as the pan fried scallops with cauliflower créme and pancetta with miso corn, says Reuben.
Chef Reuben is renowned for his passion for Cape flavours and ingredients and harnessing the flavours from a childhood growing up in a food-centric home. He's also known for is role as a judge in the MasterChef SA reality cooking show.
The menu also reflects a continued trend for shared food. “People like sharing so we’ll be continuing with our table topper, snacky type dishes and we’re excited to be using our own spice combinations in many of these – look out for Zaatar, Vadouvan and Ras el Hanout, softer, subtle spices that make food so interesting”, he says.
A chef on the move and at the forefront of flying the flag for local South African cuisine and flavours, Reuben's passion is sure to delight diners this Summer at his One&Only Cape Town eatery.
