The perfect accompaniment to usu (tripe)

  • Isgwaqane:
  • 500
    g
    sugar beans
  • 850
    g
    maize meal
  • half onion chopped
  • 2
    cubes of Knorr beef stock
  • 300
    g
    dripping oil (leftover oil from fried meat)
  • 41/2
    cup
    water
  • 1/2
    tsp
    salt
  • Nemfino:
  • 2
    Tbs
    oil
  • half an onion
  • 1
    bunch
    of spinach
  • 1
    Knorr beef cube
 

Method

Isgwaqane
Boil the beans until soft.

Add beef stock and salt, and cook for 10 minutes.

Add dripping oil, let the beans boil with the oil for another 10 minutes.

Add the onion and the maize meal; stir until the maize is covered in the beans. Keep stirring until is firmly combined when you taste it, it shouldn’t separate.

Nemfino
Cook the onions in the oil. Cook till it is golden brown.

Add spinach. Cook till the spinach is soft.

Add beef cube and cook on low heat so that the mixture simmers.

When the spinach is soft and all the flavours have mixed well together, leave it cooking on low heat for another 5 minutes.
