Spaghetti vongole

Ingredients

  • 250
    g
    spaghetti or linguini pasta
  • 3
    Tbs
    butter
  • 1
    Tbs
    good quality olive oil
  • 3-4
    cloves
    garlic, crushed
  • 1
    red chilli, seeded and finely sliced
  • 2 1/2
    c
    dry white wine or vegetable stock
  • 1
    kg
    fresh clams
  • 3
    g
    flatleaf parsley, finely chopped
 

Method

30 min
 
Cook pasta according to packet instructions until al dente. Drain, then toss in a little oil to prevent it from sticking together. Set aside.

Melt butter in oil in a medium-size saucepan over a medium heat. Add the garlic and chilli and fry for 1 minute or until fragrant.

Cook for about 10 minutes until the clams have opened. Discard any clams that don’t open up.

Add pasta to pan to reheat; season.

To serve: Garnish with parsley. Serve warm.
