Pumpkin and rum soufflé in a mug

Ingredients (6)

1/2 cup pumpkin — puree
1 eggs — separated
1 Tbs maple syrup
1/2 tsp cinnamon — ground
1/4 cup pecan nuts
1 Tbs mascarpone cheese

Method:

In a bowl combine the pumpkin puree, egg yolk, maple syrup, cinnamon, salt and rum. Mix everything together.

In a separate clean bowl, whisk the egg white until light and fluffy but not dry.

Fold it into the pumpkin mixture.

Spray a large coffee mug with cooking spray to prevent sticking and then pour the mixture into the mug.

Microwave for 2 minutes.

Turn the mug upside down onto a plate and let the souffle fall out.

Enjoy immediately with some Mascarpone cheese, a few pecan nuts and a drizzle of extra maple syrup!
