  • Creamy layer
  • 250
    ml
    tub mascarpone
  • 1/2
    cup
    cream
  • 1
    tsp
    vanilla essence
  • seeds from 1 vanilla pod
  • 1
    Tbs
    xylitol or honey
  • Coffee layer
  • 1/2
    cup
    strong coffee, cold
  • 1/3
    cup
    chia seeds
  • 1/3
    cup
    double cream yoghurt
  • 1
    Tbs
    xylitol or honey
  • 30
    ml
    cocoa powder ( for serving )
 

Method

For the creamy layer, lightly whisk everything together until smooth. Do not over mix it.

For the coffee layer, whisk everything together until thoroughly mixed.

Add a dollop of the creamy layer to the bottom of 4 serving glasses. Sprinkle over a bit of cocoa powder. Add the chia mixture to form the second layer. Add more layers with the remaining filling and cocoa making sure you end with a creamy layer.  Garnish with a final dusting of cocoa powder.

Refrigerate for at least 20 minutes before serving.
 
Tip:

You can prepare this dessert 1 day and advance and store it in the fridge overnight.
