Salad in a jar

Ingredients

  • SALAD:
  • 1
    baby cucumber cut into slices (equivalent of half a cucumber)
  • 1/2
    red onion, thinly sliced
  • 80

    stuffed green olives
  • 80
    g
    kalamata olives, pitted
  • 200
    g
    feta cheese cubed
  • DRESSING:
  • 1/2
    cup
    red wine vinegar
  • 6
    Tbs
    olive oil
  • 2
    tsp
    fresh oregano
  • 2
    Tbs
    fresh basil
  • 2
    tsp
    fresh thyme
  • 2
    cloves
    garlic
  • 1
    Tbs
    finely chopped onion
  • 1
    tsp
    dijon mustard
  • 1/2
    tsp
    whole grain mustard
  • 2
    tsp
    fresh parsley
  • 1/2
    tsp
    salt
  • 1/2
    tsp
    ground black pepper
  • 1/2
    tsp
    sugar for taste
 

Method

 
For the salad:
Place equal amounts of slices in two  jars  400 ml size . Followed by the red onion, olives and feta cheese.
For the dressing, pour equal amounts over the salad. Close and chill.

For the Mediterranean dressing:
Add all ingredients to a blender.  Mix until all pureed and no lumps and herbs merged in the mixture
Pour into a jar.
