Easy prawn and mussel curry

Ingredients

  • 1
    can
    tomatoes - diced and peeled
  • 1
    cloves
    garlic - grated
  • 5
    ml
    fresh ginger - grated
  • 15
    ml
    olive oil
  • 10
    ml
    strong curry powder
  • 8
    prawn heads
  • 2.5
    ml
    salt
  • 8-10
    medium prawns
  • 15
    mussles in shells
 

Method

20 mins
 

Cook the tomatoes, garlic, ginger, olive oil, salt, curry powder and prawn heads over medium heat for +-8 minutes. Stir constantly. 

It must have a thick-ish consistency.

Add the prawns and mussels, cover your pot with a lid and allow to simmer for a further 8 minutes. 

Taste and adjust seasoning. If you want you can add a dash of cream.

1hr 30 Add the butter to a large saucepan on medium heat and cook the onions until soft. Add the garlic, ginger, curry paste, spices and leavesand cook for 2-3 mins, stirring so it doesn't burn. Add the tomatoes and water and cook for 10 mins.
