Dark Chocolate rocky road hearts

    dark chocolate - finely chopped
  • 150

    butter - cubed
  • 42

    icing sugar

    shortbread biscuits - finely chopped

    honeycomb - finely chopped
  • 75

    salted peanuts
  • 35

    mini marshmallows

    heart sprinkles - optional

Method

Combine the chocolate, butter and icing sugar in a large glass bowl and melt it over a pot of warm water over low heat until melted and smooth.

Remove the mixture from the heat, allow it to cool for 5 minutes and stir in the biscuits, honeycomb, peanuts and marshmallows. 

Scatter the heart sprinkles in 10 x 60ml silicone heart moulds. Divide the chocolate mixture between the moulds and allow it to set in the fridge for at least 1 hour until firm. Turn the hearts out and decorate each rocky road heart with a fondant heart.

Serve as a treat or turn it into a dessert by serving it with whipped cream and a scoop of vanilla ice cream. 


TIP: 
For a boozy adult version, stir in 30ml (2 tbsp) strawberry or cherry liqueur with the melted chocolate.
