Chickpea fudge bars

Ingredients

  • 1
    tin cooked and drained chickpeas (remove the skins for a smoother texture)
  • 3
    Tbs
    peanut butter
  • 1
    tsp
    cinnamon
  • 1
    Tbs
    lemon zest
  • 1
    tsp
    vanilla extract
  • 1/4
    cup
    raw honey
  • 2
    Tbs
    coconut oil
  • Chocolate topping:
  • 6
    Tbs
    coconut oil
  • 2
    Tbs
    raw honey
  • 3
    Tbs
    coco powder
  • 1/2
    tsp
    salt
 

Method

Mix all the fudge ingredients in a large bowl, and blend with either a hand processor or a food processor till smooth.

Pour into a lined deep dish baking tray and play into the freezer till the chocolate topping is ready.

For your topping heat all the ingredients till it forms a smooth sauce.

Allow to cool for 5 minutes before adding it to the top of your fudge bars, then place the baking tray into the fridge to set for 3 hours or overnight you have the time.

Top tip:

You can choose the type of nut butter you want to use for this recipe depending on taste and allergies.
