Celery, tomato and spinach chopped salad

  • 200
    baby spinach, washed
  • 4
    large, ripe tomatoes – finely chopped
  • 2
    stalks of celery – finely chopped
  • salt and black pepper to season
  • 1/2
    olive oil
  • 1/2
    white wine vinegar
  • 4
    basil pesto
  • squeeze of lemon juice to serve



Arrange the spinach on a salad platter.

Mix the chopped tomato and celery in a mixing bowl and add seasoning.

Arrange the chopped ingredients on the spinach.

In a small mixing bowl whisk the oil, vinegar and basil pesto until incorporated.

Add a squeeze of lemon to the salad and serve with vinaigrette.
