Ingredients (8)

200 g baby spinach — washed
4 tomatoes — finely chopped
2 celery — finely chopped
salt and freshly ground black pepper — to taste
1/2 cup fresh chillies — 573
1/2 cup vinegar — white wine
4 Tbs pesto — basil
lemon juice — to serve

Method:

Arrange the spinach on a salad platter.

Mix the chopped tomato and celery in a mixing bowl and add seasoning.

Arrange the chopped ingredients on the spinach.

In a small mixing bowl whisk the oil, vinegar and basil pesto until incorporated.

Add a squeeze of lemon to the salad and serve with vinaigrette.
