Baby gem salad with crispy prosciutto and walnuts

    baby gem lettuces, washed, and sliced into wedges
  • 100

    rocket
  • 50
    g
    watercress
  • olive oil for frying
  • 60

    prosciutto
  • 100
    g
    walnuts, toasted
  • For the dressing:
  • 1/2
    c
    good quality mayonnaise
  • 2
    Tbs
    fresh lemon juice
  • 2
    Tbs
    extra virgin olive oil
  • salt and milled black pepper
 

Method

 

Arrange salad leaves on a platter.

Heat a little olive oil in a pan and fry the prosciutto until crispy. Crumble the prosciutto and nuts over the salad.

For the dressing: Mix together the ingredients and drizzle over salad.

Serve immediately.
