Ruby grapefruit tartlets

These little tartlets have a nice balance between the sweet and bitter.

Ingredients (9)

1 1/2 cup grapefruit juice — ruby
50 g sugar
2 grapefruit — peeled, segmented
6 shortcrust pastry shell
grapefruit curd — ruby
grapefruit — zest and juice
90 g butter
100 g castor sugar
3 eggs — just the yolks

Method:

Topping:
Place the grape fruit juice and sugar in a small pan, stir over a low heat until sugar has reduces, simmer for 7 minutes or until reduced by half and liquid has thickened add segments and allow to cool.

Curd:
Place the grapefruit juice, zest, butter and sugar in an heat-proof bowl over a pot of simmering water. Stir until all the sugar has dissolved.

Add the egg yolks and whisk to combine. Stir constantly over a low heat until the mixture thickens-about 15 min. Allow to cool.

To serve:
Spoon grapefruit curd into tarts and spoon over segments.
