    egg yolks
  • 85
    ml
    each, full cream sherry and castor sugar
  • 190
    ml
    cream
  • biscotti, to serve
 

Method

 
Place egg yolks, sherry and sugar in a heatproof bowl set over a saucepan of simmering water and beat with an electric beater for eight to 10 minutes or until thick and pale.
Remove from heat and beat until cold.
Whisk the cream until soft peaks form and fold through the cooled egg mixture.
Spoon into pretty, long-stemmed glasses.
Serve with crunchy biscotti.
