    egg yolks
  • 10
    ml
    cocoa powder
  • 45
    ml
    castor sugar
  • 125
    ml
    sweet marsala or dessert wine of your choice
  • 250
    ml
    thick cream
 

Method

 
Whisk egg yolks, cocoa and sugar together in the top of a double boiler, or in a heatproof bowl set over a saucepan of simmering water. Add marsala and whisk for another 5 minutes, or until thickened. Whip cream until soft peaks form. Gently fold in the egg yolk mixture. Cover and refrigerate for 3 to 4 hours before serving.
