Method

Preheat the oven to 180 ºC (350 ºF). Spray two black oven pans with non-stick spray. Blend the margarine, sugar and boiling water in a large saucepan. Heat until the sugar has dissolved and the margarine has melted. Set aside. Sift the self-raising flour, baking powder, bicarbonate of soda, cream of tartar and salt together in a large mixing bowl. Add the breakfast cereals, bran and coconut and mix well. Add the margarine mixture to the dry ingredients, alternating with the eggs. Mix well with a wooden spoon. Roll into balls and arrange in the prepared oven pans. Bake for 60-80 minutes or until done and a testing skewer comes out clean when inserted into the centre of the rusk mixture. Cool slightly before turning out onto a wire rack to cool completely. Break into pieces and dry at 100 ºC (200 ºF). Store in airtight containers. Makes about 128 pieces.
