Grilled plum, coppa and rocket salad

    olive oil
  • 1
    Tbs
    balsamic vinegar
  • 6
    plums, pips removed and quartered
  • 150
    g
    coppa, sliced
  • 150
    g
    wild rocket
  • 3
    balls mozzarella, torn
  • 100
    g
    walnuts, toasted and chopped
  • FOR THE DRESSING:
  • 1/4
    cup
    olive oil
  • 1
    Tbs
    balsamic vinegar
  • 1
    pinch
    chilli flakes
  • 1
    pinch
    caster sugar
  • Sea salt and black pepper
  • Toasted ciabatta
 

Method

Heat a griddle pan until smoking hot. Whisk together olive oil and balsamic vinegar. Brush plums with the mixture and griddle for 2–3 minutes on each side. Season and set aside.

Place plums on a serving platter, toss together with coppa, rocket, mozzarella and walnuts.

For the dressing:

Mix together dressing ingredients, pour over salad, and season well.
