Almond and orange syrup cakes

Ingredients (14)

125 g butter
125 g castor sugar
2 eggs — at room temperature
100 g flour
1/2 tsp cinnamon — ground
2 tsp Baking powder
100 g almonds — ground
1 cup milk
1 cup orange juice
orange — zest only
crème fraîche
ORANGE SYRUP:
1/2 cup sugar
1 cup orange juice
orange — zest only

Method:

Preheat oven to 160°C. Grease a cupcake tin. Place the butter in a bowl and beat until smooth. Add the sugar and beat until light and fluffy. Beat in the eggs, one at a time.

Sift together the flour, cinnamon and baking powder. Add the almonds. Combine milk, orange juice and zest. Stir half the flour mixture, with half the liquid, into the egg mixture. Add remaining flour mixture and liquid. Mix well.

Spoon mixture into tin and bake for 20 minutes or until cooked through. Allow to cool before pouring over syrup.

For the orange syrup:
In a small pot add the sugar, orange juice and zest. Stir over a low heat until sugar has dissolved. Increase heat and boil for 6–8 minutes.

Serve cakes topped with crème fraîche.
