Ingredients (11)

125.00 ml margarine
125.00 ml peanut butter — honey crunch
65.00 ml brown sugar — soft
2.00 eggs — extra-large
65.00 ml honey
65.00 ml Buttermilk
5.00 ml vanilla — essence
500.00 ml flour — cake
5.00 ml Baking powder
5.00 ml Bicarbonate of soda
salt — pinch

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a 22 x 11 cm loaf tin with non-stick spray.
Beat the margarine and peanut butter together until creamy. Add the sugar and beat well. Add the eggs one by one, beating well after each addition. Add the honey, buttermilk and vanilla essence and mix.
Sift the cake flour, baking powder, bicarbonate of soda and salt together and fold into the margarine mixture.
Turn into the prepared loaf tin and bake for 50 to 55 minutes or until done. The loaf is done when a testing skewer comes out clean when inserted into the centre. Cover with aluminium foil if the loaf becomes too dark.
Cool slightly in the tin before turning out onto a wire rack to cool completely.
Makes a medium-sized loaf.
