Yoghurt muffins

    boiling water

    raisins

    brown sugar

    butter

    wholewheat flour

    cake flour

    baking powder

    ml
    bicarbonate of soda
  • 2
    ml
    salt

    fruit yoghurt

Preheat the oven to 180 ºC (350 ºF.) Spray a muffin tin with 12 hollows with non-stick spray. Pour the boiling water over the raisins and cool slightly. Mix the brown sugar and butter together. Add the dry ingredients and mix slightly. Make a hollow in the centre and add the raisin mixture and the fruit yoghurt. Blend well, but don't overmix otherwise the muffins will have a flat crust. Turn the mixture into the prepared tin and bake for about 20 minutes or till a testing skewer comes out clean when inserted into the centre of a muffin. Makes 12 muffins.
