Yoghurt cabbage salad

Ingredients

  • 1
    head of cabbage, coarsely chopped
  • 3
    spring onions, diagonally cut into strips
  • 4
    green apples, cored and sliced
  • 1
    stick of celery chopped
  • 1
    red sweet pepper, de-pipped and cut into strips
  • SALAD DRESSING
  • 15
    ml
    lemon juice
  • 1
    grated peel of a lemon
  • 5
    ml
    honey
  • 300
    ml
    natural yoghurt
 

Method

 
Mix all the salad ingredients together in a large dish. Beat together the dressing ingredients and pour over. Stir well. Cover, cool in the fridge for about 30 minutes and serve. Serves 4-6.
