Yoghurt and fruit salad

  • 1
    medium pineapple, halved (keep the leaves intact)
  • 2
    red apples, diced
  • 30
    ml
    lemon juice
  • 250
    ml
    plain yoghurt
  • 30
    ml
    honey
  • 1
    ml
    cinnamon
  • 1
    grated rind of a lemon
  • few chopped nuts for decoration
 

Method

 
Scoop out balls of pineapple flesh with a melon baller. Neaten the edges of the hollowed out pineapple halves. Combine the pineapple balls and diced apple and pour over the lemon juice. Spoon the mixture into the pineapple halves and chill. Blend the remaining ingredients and pour over the fruit mixture just before serving. Sprinkle with a few chopped nuts if desired. You can also serve the fruit in dessert glasses. Serves 2-4.
