Ingredients

  • 125
    g
    ground almonds
  • 150
    g
    castor sugar
  • 2
    egg whites, whipped
  • 2
    ml
    (1½ tsp) almond essence
 

Method

Preheat the oven to 180°C. Place the almonds and sugar in a bowl, fold in the egg whites and add the almond essence.
Drop spoonfuls of the mixture onto a non-stick baking tray. Bake for 15 minutes.
Take out of the oven and leave to cool.
Cook's note: Sandwich together cookies with melted white chocolate, or add a few drops of colouring to make the chocolate a pretty colour.
