Yellowtail parcels

  • 250
    ml
    finely sliced leeks
  • 500
    g
    yellowtail, cut into 4 pieces
  • freshly ground black pepper and salt
  • 15
    ml
    olive oil
  • 1
    lemon, sliced
 

Method

 
Using 4 to 6 sheets of aluminium foil, make up individial fish parcels.
Arrange a layer of leeks on each sheet of aluminium foil and place a piece of yellowtail on top.
Sprinkle with pepper and salt and drizzle with a little of the olive oil.
Top with a slice of lemon and seal the parcel around the fish.
Braai the parcels over hot coals for about 6 minutes or until the fish is firm and flakes easily with a fork.
