    sugar

    ml
    salt

    oil
  • 565
    ml
    lukewarm milk
  • apricot jam
  • ICING
  • 125
    g
    smooth cottage cheese
  • 130
    g
    icing sugar
 

Method

20-30 min
 
Preheat oven to 200 ºC (400 ºF). Grease two 20 cm cake tins with margarine. Combine dry ingredients. Add oil and just enough lukewarm milk to form a stiff dough. Knead for about 10 minutes until smooth and elastic. Leave in a warm place for 10 minutes. Flatten and roll into balls. Arrange balls in prepared tins. Cover with greased plastic and leave to rise until doubled in bulk. Bake for about 20-30 minutes or till done and golden brown on top. Turn out onto a wire rack and cool slightly. Divide each cake layer in half, spread two halves with apricot jam and cover with the remaining two halves. Prepare icing: Blend cottage cheese and icing sugar together and spread over cake, allowing it to dribble down the sides. Makes 2 medium-sized cakes.
