Yakitori chicken balls

    chicken breasts
  • 1
    egg
  • 25
    ml
    soy sauce
  • 10
    ml
    freshly grated root ginger
  • salt and pepper
  • 10
    ml
    sugar
  • SAUCE
  • 125
    ml
    sherry
  • 125
    ml
    dark soy sauce
  • 50
    ml
    vinegar
  • 15
    ml
    sugar
  • 5
    ml
    cornflour
 

Method

 
1. CHICKEN BALLS: Process chicken meat and add the remaining ingredients and process until smooth. Use wet hands to form the mixture into 16 balls. 2. SAUCE: Mix all the ingredients in a frying pan and heat to boiling point. Remove from heat, add balls and return to heat. Reduce heat to low immediately, and simmer until the balls are cooked. 3. TO SERVE: Fill pita breads (see recipe or use bought ones) with balls and garnish with watercress and lettuce. Makes 16 balls.
