Winter vegetable and bean ragout

    olive oil
  • 1
    onion, chopped
  • 2
    cloves of garlic, crushed
  • 2
    ml
    smoked paprika
  • 800g-1kg winter vegetables (baby carrots, red pepper, courgettes, baby gems and patty pans)
  • 4
    plum tomatoes, peeled, seeded and chopped
  • 250
    ml
    vegetable stock
  • 1
    tin white beans, rinsed and drained
  • 30
    ml
    chopped parsley
  • cooked tagliatelle, to serve
 

Method

Heat the oil and sauté the onion until soft. Add the garlic and paprika and fry for one minute.
Add the harder vegetables (like carrots), tomatoes and stock and bring to the boil. Reduce the heat to a simmer. Add the softer vegetables and continue to simmer until the vegetables are cooked. Season to taste. Add the beans and heat through. Add a little more water if necessary. Stir through some parsley and serve with the pasta.
