Winter vegetable and bean ragout

Ingredients (10)

30 ml fresh chillies — 573
1 onion — chopped
2 garlic — cloves, crushed
2 ml paprika — smoked
mixed vegetables — winter variety
4 Roma tomatoes — peeled, seeded and chopped
250 ml stock — vegetable
1 tin white beans, drained — rinsed
30 ml fresh parsley — chopped
pasta — tagliatelle, cooked, to serve

Method:

Heat the oil and sauté the onion until soft. Add the garlic and paprika and fry for one minute.
Add the harder vegetables (like carrots), tomatoes and stock and bring to the boil. Reduce the heat to a simmer. Add the softer vegetables and continue to simmer until the vegetables are cooked. Season to taste. Add the beans and heat through. Add a little more water if necessary. Stir through some parsley and serve with the pasta.
