    oil
  • 500
    g
    stewing meat, beef or mutton
  • 2
    onions, finely chopped
  • 250
    g
    carrots, scraped and sliced
  • 1
    beef stock cube, crumbled
  • 150
    ml
    water
  • 2
    sprigs of parsley
  • 420
    g
    curried beans
  • 1
    sprig fresh parsley, chopped
  • Worcestershire sauce to taste
  • salt and freshly ground black pepper to taste
 

Method

+/- 1 hour
 
Heat the oil in a large saucepan and brown the meat. Remove with a slotted spoon and sauté the onions until soft. Return the meat to the saucepan along with the carrots, beef stock cube, water and parsley. Cover and simmer for about 1 hour. Stir in the curried beans, chopped parsley, Worcestershire sauce, salt and pepper, and heat until warmed through. Serve with rice.
