Winter 'salad'

  • 5 ml (1 t) oil
  • 1 medium onion, peeled and chopped finely or grated
  • 1 medium green sweet pepper, chopped finely or grated
  • 1 medium red sweet pepper, chopped finely or grated
  • 2 cloves garlic, chopped finely or 5 ml (1 t) dried garlic flakes
  • 1\4 cabbage, shredded or grated
  • 1 x 410 g can tomatoes, chopped finely
  • 1.5 litres boiling water
  • 125 ml soup mix and 10 ml (2 t) vegetable stock powder or 1 x 40-50 g packet onion soup powder
  • 5 ml (1 t) dried herbs

Heat the oil in a saucepan.

Fry the onion, green pepper, red pepper and garlic in the oil until softened.

Add the cabbage and stir until well mixed.

Add the tomatoes and 1.25 litres (5 c) of the boiling water.

Mix the remaining boiling water with the soup mix or onion soup powder and add to the soup, together with the dried herbs.

Cover and boil for 30 minutes (if soup powder is used) or at least 60 minutes (if soup mix is used.)

Serve instead of salad with light meals.
