    chicken pieces, skin removed
  • 45

    cake flour, seasoned with salt and pepper
  • 15

    oil
  • 2
    onions, quartered
  • 450
    g
    celery, sliced
  • 100

    rindless bacon, chopped into fairly large pieces
  • 200
    ml
    apple juice
  • 410
    g
    carrot slices, drained
  • 410
    g
    butter beans, drained
  • 15
    ml
    lemon juice
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish. Roll the chicken portions in the seasoned cake flour. Brown in the heated oil and set aside. Fry the onion, celery and bacon in the same pan until the vegetables are glossy and the bacon is just done. Add the apple juice, carrot slices and butter beans and mix. Add the chicken pieces and lemon juice and turn everything into the prepared dish. Cover and bake for about 45 minutes or until done. Serves 6-8.
