Ingredients (9)

1.00 kg flour — self-raising
5.00 ml salt
15.00 ml Baking powder
300.00 g sugar
300.00 g butter — or margerine
200.00 g bran — flakes
100.00 g pecan nuts — coarsely chopped
2.00 eggs — extra-large
375.00 ml Buttermilk

Method:

Preheat the oven to 180 ºC (350 ºF). Grease a large 37 x 13 x 10 loaf tin with margarine or spray with non-stick spray.
Sift the dry ingredients together. Add the sugar and mix.
Rub in the butter or margarine until the mixture resembles breadcrumbs. Add the bran flakes and pecan nuts and mix.
Beat the eggs and buttermilk together and add to the flour mixture.
Blend thoroughly. Spoon into the prepare loaf tin.
Bake for about 50 minutes, or until the rusks are golden brown and baked through. Turn out onto a wire rack and cool slightly.
Cut into fingers and dry out in an oven at 100 C (200 F).
Store in an airtight container.
