    cake flour
  • 125
    ml
    butter

    ground cinnamon

    extra-large egg
  • 30
    ml
    apricot jam
  • 250
    ml
    milk
  • 5
    ml
    bicarbonate of soda
  • 125
    ml
    raisins
  • 250
    ml
    dates, finely chopped
 

Method

 
Preheat the oven to 180 °C and grease a 30 x 30 cm ovenproof dish.
Heat the ingredients for the syrup over low heat until the sugar dissolves.
Heat to boiling point and pour into the greased dish.
Place the cake flour in a bowl and rub in the butter until the mixture is crumbly.
Add the sugar and cinnamon.
Beat the egg, jam, milk and bicarbonate of soda and add to the flour mixture.
Stir in the raisins and dates and spoon into the syrup.
Bake for 40 to 50 minutes or until done.
