Wholewheat sesame triangles

    active dry yeast (not instant)

    warm water
  • pinch sugar
  • 250
    g
    wholewheat flour
  • 60
    ml
    olive oil
  • 10
    ml
    salt
  • sesame seeds
 

Method

 
Dissolve yeast in water and sugar and leave until frothy. Mix flours, oil and salt in a large bowl or in the bowl of a food processor and pour yeast liquid over. Mix to a dough and knead until smooth and satiny (10 minutes by hand or 40 seconds in a food processor). Roll out into a large circle about 1 cm thick and cut into 6 wedges. Place wedges on a baking sheet, leaving some space between them. Cover with greased, floured plastic and leave to rise for about 45 minutes, or until soft and puffy. Brush gently with egg white or water and sprinkle thickly with sesame seeds. Bake at 220 ºC for about 10 minutes, or until golden. TOTAL KILOJOULE COUNT: 8 935 kJ (2 135 Cal). A portion: 1 490 kJ (355 Cal).
