    bunch spinach, leaves removed from stalks then shredded and washed

    feta cheese, crumbled

    large, ripe tomatoes, diced

    mozzarella cheese, grated
 

Method

 
Stir warm water, yeast and honey in a large bowl. Leave in a warm place for 10 minutes. Combine cold water, olive oil and salt. Add to yeast mixture, then beat in flours. Knead dough, place in a lightly greased bowl and leave to rise in a warm place for 45 minutes. Roll out onto a pizza dish or 38 x 26 cm baking sheet. TOPPING: Fry onion in oil until softened. Add spinach and fry for 5 minutes. Add feta cheese and fry until starting to melt. Sprinkle tomatoes over pizza base, spread spinach mixture over, then sprinkle with mozzarella cheese. Bake at 180 ºC for 30 to 45 minutes, or until base is cooked and cheese has melted.
