Wholewheat marmalade muffins

    dried fruitcake mix

    marmalade
 

Method

15-20 min
 
Preheat the oven to 180 ºC (350 ° F). Thoroughly grease a muffin tin with 12 hollows with margarine. Sift together the dry ingredients, returning the bran left behind in the sieve to the bowl. Beat the oil, milk, eggs and sugar together. Add to the dry ingredients and mix until just blended and still slightly lumpy. Add the dried fruitcake mix and mix. Fill each hollow halfway with the mixture. Spoon a teaspoonful of marmalade on top before filling each hollow three quarters of the way with the muffin mixture. Bake for about 15-20 minutes or until the muffins are golden brown and a skewer inserted comes out clean. Makes 12-15 muffins.
