Wholewheat chocolate brownies

    extra-large eggs
  • 500
    ml
    soft brown sugar
  • 330
    ml
    oil
  • 500
    ml
    wholewheat flour
  • 120
    ml
    cocoa powder
  • 5
    ml
    baking powder
  • 250
    ml
    chopped pecan nuts (optional)
  • 10
    ml
    vanilla essence
 

Method

 
Preheat the oven to 180 °C and grease a 25 cm square tin with butter.
Line with baking paper and grease once more.
Lightly beat the eggs until foaming.
Add the sugar and oil and beat until thick and light.
Add the flour, cocoa powder, baking powder and nuts.
Stir until mixed.
Add the vanilla essence and mix.
Turn the batter into the prepared tin and bake for 50 to 60 minutes or until firm.
Cool slightly, cut into squares and leave to cool completely.
