Wholewheat cheddar and poppy seed soda bread

    g
    wholewheat flour
  • 1
    cup
    bread flour
  • 3
    ml
    salt
  • 1
    tsp
    baking powder
  • 3
    Tbs
    butter
  • 1
    cup
    mature cheddar cheese - grated
  • 310
    ml
    buttermilk
  • 2
    Tbs
    poppy seeds and sesame seeds
 

Method

Preheat oven to 220°C. Grease a baking tray.

Place dry ingredients into a bowl and mix well. Rub butter into dry ingredients until they resemble fine breadcrumbs. Mix through cheese.

Stir through buttermilk and mix until just combined. Pull mixture together using your fingers and shape into a round.

Place dough on a baking tray. Sprinkle with poppy seeds.

Cut a shallow cross into top of dough and bake for 40 minutes or until bread sounds hollow when tapped.

Serve with soup and a spread of your choice.
