Ingredients (10)

1.00 chicken — breast, cooked, deboned
30.00 ml mayonnaise
2.00 ml Dijon mustard
15.00 ml lemon juice
0.00 butter
8.00 bread — wholewheat, sliced
1.00 tomatoes — thinly sliced
0.00 avocado — thinly sliced
0.00 mixed bean sprouts — alfalfa
0.00 salt and freshly ground black pepper — to taste

Method:

Dice the chicken breast and mix with the mayonnaise, mustard and lemon juice.
Butter the wholewheat bread slices and top half of them with thin slices of tomato and avocado, followed by the chicken mixture.
Scatter a few sprouts on top.
Cover with the remaining bread slices.
Variation:
Add grated apple and a few sultanas to the chicken mayonnaise filling.
