Wholewheat blinis with herbed sour cream

    wholewheat flour

    baking powder

    wholegrain mustard

    butter, melted

    salmon roe
  • chives, to garnish
  • HERBED SOUR CREAM
  • 125
    ml
    sour cream
  • 5
    ml
    chopped fresh basil
  • 5
    ml
    chopped fresh chives
  • 5
    ml
    lemon or lime juice
 

Method

 
Stir egg into milk. Sift flour and baking powder into a bowl, stir in egg mixture and beat to form a smooth batter. Stir in mustard and butter. Heat a greased, heavy-based pan on top of the stove and drop teaspoonfuls of batter into it. Cook until bubbles appear on surface, then turn with an egg lift. Cook until lightly browned. Remove from pan and cool. HERBED SOUR CREAM: Combine ingredients in a bowl. Spread cream on each blini, top with salmon roe and garnish with chives.
