Wholewheat French toast with blueberry sauce and caramelised bananas

Ingredients (12)

FOR THE FRENCH TOAST:
4 bread — sliced wholewheat, stale
4 eggs
1.4 cup cream
Vanilla essence — splash
butter — for frying
BLUEBERRY SAUCE:
350 g blueberries — frozen
2 Tbs muscovado sugar
1/2 cup water
FOR THE BANANAS:
4 banana — halved
100 g brown sugar — soft
70 g butter
TO SERVE:
yoghurt — Greek

Method:

Add the blueberries, sugar and water to a pot and simmer over a low heat for 10 minutes. Cool slightly, process in a food processor and pass through a sieve.
Whisk together the eggs, cream and vanilla, add the bread and soak for at least 20 minutes. Heat butter in a pan and fry the slices until golden.
Heat the sugar and butter in a pan until bubbling and stir through the bananas.

Serve the French toast topped with the bananas, yoghurt and blueberry sauce.
