Ingredients (6)

1.00 ham — smoked
0.00 mustard
0.00 black peppercorns — whole
2.00 bay leaves
GLAZE
125.00 ml jam — apricot
15.00 ml mustard

Method:

Place the meat in a large saucepan.
Add a little mustard, a few black peppercorns and 2 bay leaves.
Cover with water, cover the saucepan and simmer until the ham is tender.
Remove from the liquid.
Preheat the oven to 160 °C and remove the rind of the ham.
Score the fat with diamond shapes, and place the ham, fatty side up, on the rack of an oven-roasting tin.
Blend the jam and mustard for the glaze and brush over the fatty layer.
Roast for about 30 minutes or until golden brown.
Baste continually with the glaze while roasting.
Serve with fruit, and mustard sauce (see recipe).
