Ingredients (5)

100.00 g milk — powder
5.00 ml salt
2.00 ml freshly ground black pepper
60.00 g flour — cake
90.00 g butter — cut into small pieces

Method:

Sift the dry ingredients together. Using your fingertips, rub the butter into the dry ingredients until the mixture resembles breadcrumbs. Store in an airtight container. Makes about 1 litre white sauce.
TO PREPARE THE WHITE SAUCE
125 ml white sauce pre-mix
250 ml water
Place the prepared mix and water in a saucepan and blend well. Heat slowly, while stirring continuously, until the mixture thickens and comes to the boil.
TO MICROWAVE
Place the ingredients in a suitable container, blend well and microwave for 4 minutes on 100 percent power, stirring well at 1-minute intervals.
VARIATIONS:
To make a THICK white sauce, reduce the water to 200 ml.
CHEESE SAUCE
Add 100-200 g grated Cheddar cheese, 5 ml prepared mustard and a pinch of cayenne pepper to the sauce.
TOMATO SAUCE
Heat 2-3 onion rings with the white sauce. Remove the onions and add 25-30 ml tomato sauce.
PARSLEY SAUCE
Add 25 ml finely chopped fresh parsley after removing the sauce from the stove.
MUSHROOM SAUCE
Drain a small can of mushrooms and add to the sauce. Alternatively, slice a packet of fresh mushrooms, stir-fry until pale brown and add to the sauce.
