White rice and snoek

    margarine or oil
  • 1
    onion, thinly sliced
  • 15

    mild curry powder
  • 250

    smoked snoek, skinned and flaked
  • 500
    ml
    cooked jasmine rice
  • 410

    whole tomatoes, finely chopped
  • salt and freshly ground black pepper to taste
  • 2
    hard-boiled eggs, finely chopped
  • 1
    lemon, sliced
 

Method

 
Heat the margarine or oil in a large pan and sauté the onion until soft. Add the curry powder and stir-fry for a minute. Add the snoek and cooked rice, stirring with a fork until well blended. Add the finely chopped tomato and simmer slowly for a few minutes until heated through. Season to taste with salt and freshly ground black pepper. Turn the mixture into a pretty serving dish and sprinkle with the finely chopped hard-boiled eggs. Garnish with lemon slices and serve with chutney. Serves 6.
