White chocolate swirl brownies

  • 100
    g
    quality white chocolate
  • 2
    Tbs
    full cream milk
  • 150
    g
    butter
  • 3/4
    cup
    brown sugar
  • 1
    cup
    cocoa powder
  • A pinch of salt
  • 5
    ml
    vanilla essence
  • 2
    eggs
  • ½
    cup
    flour
 

Method

Preheat oven to 180ºC.

Carefully melt the white chocolate with the milk in the microwave until melted and combined.  Set aside to cool.

Add the butter, brown sugar, cocoa and salt in a microwave safe bowl and microwave these ingredients until melted and combined – stirring occasionally.
 
Add the vanilla essence and eggs, mix through. Add the flour by folding in.
 
Pour the batter into the baking tin and spoon the melted white chocolate with a table spoon, giving it a swirl into the batter.

Bake for 12 minutes. Remove from oven and leave to cool before cutting it into blocks.
