White chocolate cake with dark chocolate glaze

    good-quality white chocolate

    self-raising flour

    baking powder
  • 175

    castor sugar
  • 85

    butter or margarine

    jumbo eggs

    milk
  • 5
    ml
    vanilla essence
  • DARK CHOCOLATE GLAZE
  • 100
    g
    good-quality dark chocolate
  • 40
    g
    butter or margarine
  • 15
    ml
    honey
 

Method

35 minutes
 
Preheat the oven to 180 °C. Coat a 20-cm round, loose-based cake tin with cooking spray and set aside.

Melt the chocolate in a heatproof bowl over simmering water. Remove from the heat and spoon into the bowl of a food processor (fitted with the plastic blade). Add the remaining ingredients and mix thoroughly. Spoon the batter into the prepared tin and bake for 35 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool in the tin for 10 minutes. Turn out onto a wire rack with a plate underneath and leave to cool. Pour the dark chocolate glaze over the cake.

TO MAKE THE GLAZE: Mix together the chocolate, butter and honey in a small, heavy-based saucepan. Bring to the boil, remove from the heat and pour over the cake.
